| How thick should a microstrip patch antenna be? I'm assuming it should be significantly thicker than the skin depth. Is this correct? |

| Yes. The thickness of your conductors should be at least 10 skin depths. The separation between the conductors should be 0.003-0.05 wavelengths. The separation between the conductors (the dielectric) will dominate the thickness of your patch antenna. |
