Sorry for the noobish question, but when building a dipole antenna, how does one get the arm wires to stick out straight without bending?

You can use thick conductors, that's the easiest way.

If you want an extremely thin wire that won't support itself you could just use some sort of plastic PVT pipe to attach it too. Pretty much anything non-metallic would be ok (styrofoam is great, glass is ok, ....)
